Tending to her farm since the early nineties, Emilse Rubio knows her trade. So when she urges roasters to include organic coffees in their range, there’s a reason behind it. In her words:
“Colombia (…) is a country with a rich soil, but growers should take care of it; it’s could be possible only if all consumers are aware about the impact of purchase an organic coffee [sic].”
She and 58 other farmers in her region have associated to share seeds and knowledge on organic practices and sustainability.
The cherry on the cake is that this do-goodery doesn’t imply a compromised cup at all. We brew this coffee into a really smooth cup with hints of almonds and sweet notes of dried fruit.
