This coffee comes from a single producer selected by our partner JJ Marck for their commitment to quality, openness to learning, and the diverse varietals grown on their farm in the Agua Colorada region. Only fully ripe Marshell and Bourbon cherries were harvested for this coffee.
The coffee underwent a 72-hour controlled fermentation before drying, resulting in complex red-fruit flavours, wine-like notes, and a jammy sweetness. This young partnership with JJ Marck is already showing strong promise.
