Coffee rust, while still absolutely devastating when it grabs hold of a farm, can also be a catalyst for change. The Salaverria family have been farming coffee for generations at Finca San Francisco, but dealing with the leaf disease they have been forced to reconsider their practices. Cherries are separated by tablones and processing method, where possible organic fertiliser is used, and pickers are getting paid extra when they are highly selective. This lot is a natural processed coffee from tablon La Independencia, done in a for the region exotic style with African raised beds. We are tasting a very sweet cup with rich chocolate hazelnut overtones, finishing on lingering fruits.
